I love any recipe that allows me to create two kitchen staples at the same time while filling the house with a lovely aroma – all from one, lowly chicken. This Poached Chicken and Savory Broth always makes KilKenney Kitchen a happy place.
I often buy a couple of whole chickens when they’re on sale at my favorite co-op or grocery store and throw them in the freezer. Then when I have a free Sunday I take a couple of hours, set a pot to work and get a double bonus – 2 quarts of rich, delicious, homemade broth and enough beautiful poached chicken to make my Chicken Enchiladas, Tarragon Chicken Salad or a delicious soup.
