Little fuss, little time and only a few ingredients are the key components this week. This terrific recipe for Baked Chicken Breasts with Thyme is my new favorite way to make boneless, skinless chicken. A baking dish, a piece of parchment paper, a little cooking spray and you’re good to go. Terrific as a Weeknight Wonder and the leftovers are perfect for chicken soups and salads.
I adapted the recipe from one of my go-to cooking websites called The Kitchn. It’s a terrific site full of practical tips, techniques and ideas. I learn something new almost every time I visit.
I hope you’ll dig out your parchment paper or grab some at the store and give this Baked Chicken Breasts with Thyme a try. I’ll use the chicken next week in a fabulous Spring Chopped Salad, so you’ll want to have some at the ready!
