Chicken confession time – I’ve been in a rut. Now, don’t get me wrong, I like chicken as much as the next gal. And ….maybe it’s a bit sacrilegious as a food blogger to admit it, but I’ve let the chicken get boring over the last few months. I tend to make the same few recipes, and often just throw some chicken breasts on the grill for a quick, healthy, albeit not inspired, meal.
Well, readers, June is here and the time has come to break out of the shell. (pardon the pun). A quick trip to the Asian Market, a search through Mark Bittman’s recipes, a few of my own adaptations and an idea was hatched.
The dried Shiitakes are perfect in this Chicken Mushroom Burger – a true rut-buster recipe.
While they won’t win a beauty contest, these earthy, light Chicken Mushroom Burgers taste fantastic. A few dried mushrooms and some parmesan cheese and garlic mix up into a new way to enjoy an old favorite. Whip up a big batch this week – grill a few and freeze some for later. I think you’ll enjoy them.
