Although this is not a phrase that describes me in all parts of my life – just ask my kids! it is usually an apt description of me in the Kitchen; even when real life interferes with my cooking plans.
Last week, I was asked to bring a tossed salad to a lunch – piece of cake, right? So, I thought. I had picked up all the ingredients over the weekend and was feeling well organized and prepared. (Not always a good sign)
As I started to make the salad, I realized that I had forgotten to buy lettuce and, frankly, just didn’t want to go back to the grocery store. Hmmm – what’s a girl to do?
Thankfully, cucumbers came to the rescue. I had a little over an hour to spare, three English cucumbers, a red onion, a bottle of rice vinegar and some dried dill at my disposal, so I engaged my creative juices and set to work.
The result is this bright, fresh Cucumber Salad with Dill. It’s easy to make, tastes fabulous and feels like just the ticket for spring. The salad was a hit at the party, and until now, no one knew it was an understudy. The leftovers double as a relish for burgers and sandwiches, so make a big batch – you’ll be glad you did.
It’s also a perfect way to celebrate all things green tomorrow. As you can imagine, it’s the official holiday here in KilKenney Kitchen!
