April Showers Bring May……. Lettuce?

OK – I know that’s not how it really goes but the spring rain this year has made my tiny kitchen garden explode with greens.  Beautiful and tender – my pots overfloweth.  How lucky am I?

Four packages of seeds and four random pots and I’m a happy girl.  The challenge, which I’m totally up for,  will be to find new and delicious recipes for all these greeny greens.  I begin today  with this sumptuous Shrimp Salad with Dill.  Easy and quick enough for everyday and perfect for any summer party or picnic, this recipe is a winner.
