Creamy and delicious, homemade almond milk is a breeze to make. You can enjoy it in all dishes sweet and savory.
Ingredients
- 1 cup raw almonds
- 2 cups water for soaking
- 4 cups water for blending
Instructions
- Place the almonds in a bowl and cover with about 2 cups of water and soak overnight.
- Drain the almonds
- Place the almonds and 4 cups of water into a Vitamix or other powerful blender. If you like your almond milk a bit sweet add a couple of dates or a tablespoon of maple syrup
- Blend on high (increasing the speed as you go) until the almonds are fully blended
- Grab a nut bag or some cheese cloth
- Drain the almond milk through the nut bag or cheese cloth into a large bowl or pitcher
- Squeeze the nut bag or cheese cloth. Discard the almond pulp or save it for baking
- Store the almond milk in a glass jar in the refrigerator. Give it a good shake before using in all your favorite dishes.
