As much as I enjoy the holidays, I love the slate clearing feeling of a new year. Like some of you, each January I make resolutions and then blatantly disregard them before the year gets underway; getting to the perfect weight, exercising every single day, eating only healthy foods, organizing my office, being nice all the time etc….
This year, I’ve decided to take a new tact. Just to be crazy I’m going to make my resolutions realistic and reasonable. Who knows, maybe I’ll actually stick to a couple!
A perfect place to start after the food laden month of December is a resolution to eat more greens. Luckily for me, I love the green stuff. This Rejuvenation Salad (Thank you Charlie for the name) is the perfect place to start.
This Rejuvenation Salad instantly makes me feel better about life. It’s fresh, crunchy and full of ingredients that taste fantastic and just scream healthy. As a bonus, it’s beautiful and a breeze to make – now that’s what I call a realistic, reasonable resolution.

Just made this salad. Tasty!! Doesn’t taste “good for you” and that’s a good thing.
I did make one substitution: toasted almonds for the pecans. I already had almonds on hand and the nearby grocery store wanted an arm and a leg for pecans. It still worked out fine.

Now that the holidays are over, my husband and I most enjoy food that is tasty (of course!), interesting, and easy to prepare. Both of us really enjoyed this salad on all scores – thank you!
