Watermelon Salad with Basil and Feta
Nothing better on a hot summer night. The beautiful juicy watermelon pairs perfectly with the salty feta and sharp basil. You'll want to make this one over and over.
Ingredients
- 1 medium Seedless Watermelon
- 4 ounces crumbled feta cheese
- 6 large basil leaves
- 1 medium lime
- 2 teaspoons extra virgin optional
Instructions
- Cut the watermelon into good size chunks - about 2" each and place the chunks in a pretty bowl
- Grab your beautiful basil. I used both regular and Thai basil that I found in my garden. Whatever you have (or steal from your neighbor) is great!
- Pick 6-8 big basil leaves and pile them on top of each other
- Roll them up like a cigar and slice through - also know as Chiffonade - to impress your fancy chef friends!
- Give the slices a whirl to separate them and grab a lime
- Squeeze the lime over the watermelon chunks
- Grab some lovely Feta and crumble it (or just buy crumbled Feta, of course)
- Add the crumbled feta, basil and drizzle of olive oil to the watermelon. Refrigerate until you are ready to serve. It will go fast!
