I love a versatile vegetable, especially when 10 of my favorite people are coming for dinner during a snow storm. Last weekend in the snowmagedden here in MN, we happily hosted a Sunday dinner for family from near and far. Given the weather, it was a refrigerator-cleaning-out kind of meal. My sister-in-law, Kassy, brought a delicious pork tenderloin and I found a beautiful Futility Farms skirt steak, a mixed green salad and a slightly stale loaf of bread. As a bonus, I had two bags of Trader Joe’s riced cauliflower and a idea was born.
The resulting Cauliflower Fried Rice was a big hit – even with the teens and college students (although to be fair, they’ll eat just about anything). Easy and delicious this recipe is a breeze to make any way you like. I added some heat and other fresh vegetables for color, but if like a more traditional approach, add eggs,peas and carrots.
