Cauliflower Mash
This healthy side dish is creamy and delicious. A touch of parmesan cheese and bacon makes it a winner
Ingredients
- 4-5 slices bacon cooked crisp
- 1 head cauliflower cut into florets
- 4 cloves garlic pressed or minced
- 1/2 cup milk or more if needed
- 2 -4 ounces Parmesan cheese grated
- 1 tablespoon butter
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat the oven to 350 degrees
- Cook the bacon until it's nice and crisp. Set aside
- Place the cauliflower florets and minced garlic in a large pan of salted water. Bring to a boil and cook for 20 minutes or until the cauliflower is tender and soft
- Drain the cauliflower/garlic
- Return the cauliflower to the pan, add the butter and milk
- Using a hand mixer or immersion blender, blend the cauliflower until it looks like mashed potatoes - about 3 minutes
- Grate the parmesan - I use about 2 ounces for this recipe, but feel free to add more if you like
- Add the parmesan cheese, salt and pepper and give it a stir
- Spray or butter a baking dish
- Place the cauliflower and parmesan mixture into the baking dish. Cover with the crumbled bacon slices
- Bake until hot - about 15 minutes. Serve with chicken, beef pork and/or fish. Enjoy the leftovers all week long.
