How often can you say that? Interestingly – a few times in here in KilKenney Kitchen over the last couple of weeks. Most of you know that other than my much loved Microplane, I’m not a big gadget girl. I prefer the old-fashioned tools including my trusty chef’s knife, peeler, wooden spoons and, of course, clean hands.
Truth be told though, I changed my tune a bit this summer. I bought an Instant Pot in July and I’m completely hooked! (I bought it on Amazon Prime when it was on sale for $69.00 which made the decision to try it pretty easy to swallow.)
This handy counter top cooker is a little pot of happiness. It’s a combination pressure cooker, slow cooker, rice cooker and yogurt maker (cool, right?) It also has a fantastic sauté feature that allows me to cook vegetables and sear meat in the same pot which solves my annoyance with the Crock Pot. I’m just beginning to play with it and so far, I’m impressed. I will share more recipes with you as I develop them and I’d love to hear your suggestions and questions too.
This week, I made this savory and delicious Pressure Cooker Barbecue Pork and it was a huge hit. Easy and quick, it was perfect for a busy weeknight dinner and provided lovely lunch leftovers as well.
