Fall Forward

I know the daylight savings saying is “fall back” but this year “fall forward” feels more appropriate for me,

As many of you know, I left my full-time  job as an HR Director in February. Today marks seven months of “retirement”. And while I enjoyed taking a minute to rest, I’ve also taken time to rejuvenate and refocus and I’m more than ready to fall forward into my next chapter.

I am pleased with the forward motion so far but I also know I will stumble as I go, so “falling” feels just about right. I’m equal parts excited and nervous, hopeful and worried…… You know the drill.  Even at 60, it’s amazing how the confidence still wobbles.  I am plowing forward though –  taking fresh ingredients and creating something new. I’m learning a ton and willing to weather the bumps and falls along the way. I invite you to come along with me, so here goes:

In early October, I will relaunch the KilKenney Kitchen website with nifty new features as well as updated old favorites.

You’ll see fun, in-person, cooking classes along with the introduction of delicious, healthy and gluten free meals you can purchase and pick up weekly on Tuesdays – directly from my kitchen to your table.

I will be teaching the cooking classes and creating the weekly meals in KilKenney Kitchen this fall but plan to expand to a larger kitchen space next year, if all goes well.

One thing that won’t change is the recipes and musings you are accustomed to from me – like this beauty, just in time for Labor Day weekend.  Corn on the cob is at its peak now and this quick, easy  Fresh Corn Salsa takes that sweet treat to a new level.  Make a double batch and share it with all your favorite people this weekend – It’s a winner – just as my friend Father Jack Davis – my willing tester earlier this week.
