It’s been a hot one here in the Twin Cities so far. Long, sunny days drift into humid nights – the kind where sleep can be hard to come by. I remember taking cool baths growing up in our old houses with no air conditioning and positioning the fan a little too close to my face to get some sleep.
Often, on those hot, hot nights, we indulged in an ice cream cone before bed. For me always sugar cone, never a cake cone, and strawberry was my all time favorite. Sweet and creamy with a hint of tang from the chunks of over-ripe fruit.
One sweltering night last week, I dug my ice cream insert out of the back of the freezer and decided to recreate the experience. I have to say that everyone was glad I did. This super easy Strawberry Ice Cream is the perfect way to celebrate summer.

Maggie, could you substitute peaches for the strawberries without having to alter the recipe? Growing up in the south, peach ice cream was our go-to crowd-pleaser. No crowd here, but I think it would please the two of us!
