This week in KilKenney Kitchen, we’re traveling south of the border. I love eating and, therefore cooking, Mexican food. I am in no way an expert, but I enjoy experimenting with a variety of ingredients and spices to build fabulous flavors.
One happy result of these experiments is this recipe for Spirited Shrimp with Pickled Jalapeños. It’s a winner – fresh, bright, citrusy and full of flavor. Gotta love an quick, delicious appetizer that gets rave reviews every time I make it. It’s the perfect dish to bring to a party or happy hour.
You will find the ingredients for this salsa at most large grocery stores but, if you’re up for a field trip, seek out your local Mexican Market. Living in Twin Cities, I head to El Burrito Mercado – an incredible, family owned Mexican market with two great locations. The main market is on Cesar Chavez Street in Saint Paul and the second, smaller, store is in the Midtown Global Market on Lake Street in Minneapolis.
El Burrito’s St. Paul market has a huge selection of Mexican ingredients including produce, canned and dry goods, a deli full of ready-made meals to take home and a butcher shop. The cafeteria-style restaurant serves delicious home-made Mexican meals at great prices that satisfy even the hungriest teenagers.
So pick up some pickled peppers the next time you are at your favorite Mexican market (or make your own with my recipe for Pickled Carrots and Jalapeños) and try this salsa. You’ll be so glad you did!
