Lemon Mustard Vinaigrette
When life gives you lemons.... make this versatile vinaigrette using ingredients you probably already have. Perfect on your favorite greens or as a marinade for chicken or fish - this one's a keeper
Ingredients
- 1 teaspoons dijon mustard
- 1 large lemon squeezed
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- 1 pinch kosher salt
- 1 pinch ground back pepper
- 10 leaves fresh basil or 1/2 teaspoon dried basil
Instructions
- grab your fresh basil (or dried basil) - This is the Thai Basil I have growing in my garden this year. Lovely flavor.
- Give the basil a chop - and enjoy that lovely aroma!
- Grab some honey - I love this local MN honey I found at Costco of all places - very bee friendly
- Give the lemon a squeeze - another great smell
- Add all the ingredients into a blender
- Give it a whirl - until well blended
- Taste and adjust the seasonings
- Toss it in a jar and use it all week long - on your favorite greens or as a marinade for grilled chicken, pork or fish. This is truly a versatile vinaigrette!
