It’s a Snap

A snap pea!  I can’t resist these beauties from the Vue Xiong family (on the corner of 5th and Wall) at the St. Paul Farmer’s Market.  Baskets and baskets line the table calling my name.  In my excitement last week, I went a little overboard and when I got all those gorgeous snap peas home, I realized it was time to get creative.

I’m a big fan of roasting vegetables but, until now, have thought of it as a fall endeavor.  After enjoying the snap peas raw for days without making a dent, I decided to give it a try.

Low and behold they were fabulous! (In the spirit of full disclosure, I have many examples of experiments that didn’t go so well – my kids would be happy to recount them for you anytime!)

These Roasted Snap Peas are easy, tasty and versatile making them the perfect summer side dish.  Serve them hot with your favorite protein, room temperature as an appetizer or straight from the refrigerator on a salad.  Give them a try and, as always, let me know what you think.
