Roasted Potatoes and Onions

Beautiful baby potatoes and sweet young onions make for an easy, delicious summer side dish.

Ingredients

  • 1 pound baby red potatoes
  • 1 bunch small sweet onions
  • 1 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 pinch kosher salt
  • 1 pinch ground black pepper

Instructions

  • Preheat the oven to 400 degrees
  • Grab those beautiful baby potatoes and sweet onions - ideally at your favorite farmers market
  • Grab some fresh thyme (or your favorite herbs)
  • Cut the potatoes and onions into 2" pieces and sprinkle with the fresh (or dried) thyme
  • Melt the butter and oil together
  • Drizzle the butter mixture on the potato and onions`
  • Roast the potatoes and onions until toasty and tender - about 40 minutes - check them every 15 minutes or so
  • Serve with all summer to all your favorite people
