Roasted Potatoes and Onions
Beautiful baby potatoes and sweet young onions make for an easy, delicious summer side dish.

- 1 pound baby red potatoes
- 1 bunch small sweet onions
- 1 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 pinch kosher salt
- 1 pinch ground black pepper
Preheat the oven to 400 degrees
Grab those beautiful baby potatoes and sweet onions - ideally at your favorite farmers market
Grab some fresh thyme (or your favorite herbs)
Cut the potatoes and onions into 2" pieces and sprinkle with the fresh (or dried) thyme
Melt the butter and oil together
Drizzle the butter mixture on the potato and onions`
Roast the potatoes and onions until toasty and tender - about 40 minutes - check them every 15 minutes or so
Serve with all summer to all your favorite people
