Fresh Corn Salsa

White wine vinegar
or other light vinegar

fresh cilantro

cumin

Instructions
Cut the kernels off the corn cobs. I like to use a sharp knife and cut toward me (carefully!)
Chop the jalapeño finely and add as much as you like for spice
Chop the red onion finely
Add the jalapeño and red onion along with the lime juice, vinegar, chili powder, cumin and salt to the corn and mix to combine
Squeeze the limes - I love this citrus press my son Jack gave me for Christmas last year - makes quick work of lemons & limes
Chop the cilantro
Add the cilantro to the corn, give it a stir and let it sit for 15-30 minutes
Taste and adjust the seasonings and enjoy on tacos, salads or sandwiches. YUM!
