Heat the oven to 400 degrees
Grab some beautiful carrots from your favorite farmer's market
Cut the tops off the carrots, leaving an inch or so and peel them. Place them on a sheet pan lined with parchment paper. You can sauté the green tops with some olive oil and a pinch of red pepper flakes for another great side dish
Place the honey, brown sugar, butter, garlic cloves and salt in a small saucepan.

Remove the garlic cloves and pour or brush the honey-butter mixture onto the carrots, turning to coat all sides, Sprinkle the thyme on top
Roast the carrots until they are just tender - turning once to ensure an even roast - 25 to 30 minutes
Serve on a pretty platter with all your favorite summer foods
