Ingredients
4earsfresh corn on the cobpeeled
2mediumjalapenosdiced
1/2smallred oniondiced
2-3large limes
1pinchkosher salt
1/2 bunchcilantro chopped
Instructions
Grab your fresh corn, jalapeños and red onion. I got all of these from my local farmers market
Cut the kernels off of the corn cobs. I like to use a small bowl inside a large bowl and a sharp knife. It keeps the kernels from going all over the kitchen
Separate the kernels in a bowl and add the diced onion and jalapeño.
Give it a stir and add the juice of the limes and kosher salt
Add the chopped cilantro, stir and taste to adjust the seasonings. Let it rest in the refrigerator for a half hour or so to allow the flavors to meld.
