Well-Dressed – Blue Cheese

Happy summer!  The solstice on June 21st is one of my favorite days of the year.  I love the long lingering light and the easy transition to a new season; particularly as evidenced by this fabulous find at the Minneapolis Midtown Farmer’s Market.

These beautiful greens just beg to be washed, dried and tossed into a well-dressed salad.  I’m a huge fan of  homemade salad dressings like this creamy Blue Cheese Dressing.  Making them is quick, easy, delicious and, of course, gluten free. I will share a variety of dressings and vinaigrettes with you throughout the summer, so you will always have some great choices at the ready.

Blue Cheese Dressing

This tangy, rich and delicious dressing is perfect on a green salad, with buffalo wings or slathered on a burger. You'll be happy to have a jar of this on hand all summer.

Ingredients

  • 4 oz blue cheese
  • 1/3 cup sour cream
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonaise
  • 1 tbsp White wine vinegar or white vinegar
  • 1/2 tsp worcestershire sauce
  • 1/4 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 1 splash milk if needed

Instructions

  • Mix the 1/3 cup sour cream, 1/3 cup Greek yogurt, 1/4 cup mayonnaise in a bowl or large measuring cup and blend well with a fork
  • Add the 1 tbsp white wine vinegar and the 1/2 tsp worcestershire sauce; mix together
  • Add the blue cheese to the mixture
  • Gently mix the blue cheese into the dressing with a fork. Add the salt and pepper
  • Mix together, taste and adjust the seasonings as needed. If the dressing is too thick for your liking, add a splash of milk, mix with the fork until it is slightly thinner.
  • Place in a jar or bowl and refrigerate. We enjoy this dressing on everything from salads, to chicken wings to burgers - it's a summer staple!
