Weeknight Wonders – Chicken Rice Bowl

What a fabulous couple of weeks it’s been here in KilKenney Kitchen!  Two graduations – Jack from Carthage College and Charlie from De La Salle High School.  Bill and I are incredibly proud of these young men and excited for them as they transition to work and college.

Before that happens, though, we’ve got a house full again.  I love having everyone home for what could very well be the last summer we are all under one roof.  Having said that….it can create some havoc managing four work schedules, friends, extra activities and a puppy.

Keeping the kitchen stocked with meals that work well for dinner, lunches and late night eating (as those 18-22 year olds tend to enjoy) is truly where good food meets real life!

To that end, I’ve started a new category for the blog called “Weeknight Wonders”  These recipes are healthy, delicious, easy to prepare in 30 minutes or less, and reheat beautifully.  They are, as always, gluten free as well.

This Chicken Rice Bowl is truly a Weeknight Wonder.  The Thai flavors combine with the lean ground chicken (or turkey) to create a bowl full of flavor.  Add a few of these Pickled Red Onions and a sprig or two of cilantro and you’re good to go.  The leftovers will be gone quickly.
