The In-Between

The month of March always feels like the in-between to me.  The weather here in Minnesota begins its annual tease; warm enough to abandon the coat one day, an icy wind and threat of snow the next.  The warm, light evenings are offset by the cool, dark mornings, making the schedule feel out of kilter for a couple of weeks.

As I create and plan recipes for March and April, I realize that the in-between extends to the kitchen too.  It feels like I’m beyond the savory stews and soups that worked so well this winter, but not quite ready for light salads and grilling.

Enter this wonderfully versatile recipe I’ve dubbed Pulled Pork-O-Rama.  It uses an old favorite kitchen tool – the slow cooker and is just the ticket to help you navigate the in-between with ease.  This delicious recipe produces a succulent, rich pork that is perfect for a variety of uses from sandwiches to salads to tacos.  Also great with these quick Pickled Red Onions and our Savory Rice with Ginger and Cilantro. As a bonus, your kitchen will smell fantastic while it cooks!

    You had me at “Pulled Pork” but the fact that it is a slow cooker recipe sealed the deal. It is on the menu for this week. Whenever I try a new recipe the family members present are asked;
    “Is this one I should REPEAT or is this a NEVER AGAIN? My bets are on REPEAT.
