Soup Stories

What’s not to love?  Fancy or plain, hearty or light, creamy or brothy, soup is a star.

I have a long and happy history with soup.  I remember eating (but not loving) lobster bisque with my father at a restaurant in New York as a little girl. I’m instantly transported to my Nana’s little white house in Vermont everytime I eat a bowl of spicy, crunchy gazpacho.  (I’m still working on re-creating her fantastic recipe and will share it with you all when I get it right). I found comfort in hot, briney bowls of clam chowder during my awkward junior high years in Maine.  My mother used to make a super healthy, yet incredibly flavorful soup she called “Survival Soup” – probably because it was as quick a meal she could put on the table for four hungry kids.

I’ve got lousy soup stories too – my kids still talk about the disgusting Turkey Meatball Soup recipe (from an early cookbook I won’t mention but it rhymes with hachel hay) that even the dog didn’t want.  Suffice it to say that was a long time ago!

And then there is the quintessential chicken noodle soup.  I don’t have a fantastic homemade memory, but that little red can of Campbell’s hit the spot when I had a cold.  Of course, as it turns out,  it made me sick as an undiagnosed celiac, but the memory remains.

This Chicken Zoodle Soup is my updated, gluten free version of the old classic.  Steamy and satisfying, it hits the spot for a family dinner, a quick lunch and is a perfect elixir when you’re under the weather.

  1. Vlad and I love soup. Sarah not as much but she makes a great pea soup. Will give this one a try. I love sprinkling cilantro lemon and onion on chicken soup!
