Instructions
  1. Drain the tuna; Any good canned tuna will work well in this recipe. I love this Wild Planet tuna - it tastes delicious and is sustainably caught.
  2. Add the tuna to a bowl and flake with a fork
  3. Chop the stalk of celery into a small dice and add to the tuna
  4. Chop the 1/4 cup of pickled onions (see the recipe for these on the blog) into a small dice and add to the tuna. If you don't have pickled onions, dice a small red onion or add 1/4 cup of pickle relish
  5. Mix the 2 tbsp mayonnaise, 2 tbsp greek yogurt, 1 tbsp lemon juice, the salt and pepper in a small bowl or measuring cup - stir to blend completely
  6. Add the dressing to the tuna, taste and adjust the seasonings. You may want more salt (especially if your tuna is unsalted, more pepper or more lemon juice)
  7. Serve on your favorite plate with some gluten free crackers or in a sandwich for a light, delicious lunch or snack
