  1. Rinse and drain the cooked shrimp. (if you are using raw shrimp, peel and devein them, place them in boiling, salted water, reduce the heat and boil for 1-3 minutes until they are pink and firm,then drain and cool)
  2. Chop the shrimp into small bite size pieces and place them in a large bowl (Try to chop the shrimp, cucumbers and tomatoes into the same size pieces)
  3. Remove the seeds from the tomatoes
  4. Chop the tomatoes into small pieces and add them to the shrimp
  5. Seed, peel and chop the cucumber into small pieces and add them to the shrimp & tomatoes (I like an English cucumber in this recipe - it's firm and virtually seedless)
  6. Cut the top & bottom off the pickled jalapeños and remove the seeds. You can find these in small cans at a large grocery store in the Hispanic aisle and at your local Mexican Market. (check the label to be sure they are gluten free) If you can't find them substitute 1/4 to 1/2 of a fresh jalapeño or make your own with my Pickled Carrots and Jalapeños recipe on the blog
  7. Chop the pickled jalapeños into very small pieces and mix about 1/2 of them into the bowl with the shrimp and vegetables
  8. Zest one of the the limes and add to the bowl
  9. Chop the cilantro and add to the shrimp mixture
  10. Squeeze the limes into the bowl, add the salt and taste for flavor and spice level - add more pickled jalapeños and salt to your taste. Store in the refrigerator until you are ready to serve it
  11. Serve this delicious, limey, salty, spicy mixture with tortilla chips or your favorite crackers. Enjoy!
