  1. Preheat the oven to 400 degrees
  2. Place the cherry tomatoes (or quartered Roma or medium tomatoes) in a bowl. I had a bucket of tomatoes left from a party, so I quadrupled this recipe - YUM!
  3. Drizzle the tomatoes with the olive oil
  4. Add the dried basil, oregano and thyme (or your favorite herbs) to the tomatoes
  5. Chop the garlic
  6. Add the chopped garlic to the tomatoes
  7. Mix well and spread the tomatoes on baking sheet in a single layer
  8. Roast the tomatoes for about an hour - checking them every 20 minutes or so - they will be watery, at first, but no worries just keep roasting! This is how they'll look after 20 minutes
  9. This is what they will look like at about 40 minutes
  10. Roast the tomatoes until the water has almost completely evaporated, and the tomatoes are brown and lovely. As a bonus, Your kitchen will smell amazing!
  11. Serve them a million ways - over pasta as a light sauce, on top of a toasted baguette (GF, of course) as a bruschetta, mixed into cream cheese on a sandwich, added to a salad and/or on a plate with cheese and nuts as an appetizer. YUM!
