Instructions
Make the dressing
  1. Cut and squeeze the lemons. 2 large lemons should equal 1/4 cup of lemon juice
  2. Add the 1/4 cup lemon juice, 1/4 cup apple cider vinegar, 1 tablespoon honey, 1/2 teaspoon salt and 1/4 teaspoon of pepper to a pint jar
  3. Grate the ginger with a microplane or chop it very fine and add it to the jar. I usually grab my peeled knob of ginger out of the freezer. It grates beautifully right over the jar.
  4. Add the 1/2 cup olive oil to the jar
  5. Shake the jar like crazy until the dressing emulsifies and combines completely.
Make the Salad
  1. Core and shred the red cabbage using a mandolin or a sharp knife. A small cabbage will generate about 2 cups of shredded cabbage
  2. Shred the 3 large carrots with a grater or food processor. You want about 2 cups of shredded carrots
  3. Add the 4 cups of kale to a large salad bowl. Squeeze the juice of 1/2 a lemon and sprinkle with a 1/2 teaspoon of salt
  4. Using your hands, massage the kale, lemon juice and salt until it begins to soften and darken in color
  5. Add the shredded cabbage, carrots and 1 cup of toasted pecans to the salad and mix to combine
  6. Add about 1/2 of the dressing to the salad and toss. Add more dressing as desired until it reaches the amount you like. (No worries if you have leftover dressing, it works beautifully as a marinade for chicken or fish)
  7. Serve the salad by itself for a delicious light meal or add some grilled chicken or shrimp for added punch of protein.
