Instructions
  1. Rinse the quinoa under cold water in a small mesh strainer for a couple of minutes. (Rinsing the raw grain helps to eliminate any bitter flavor when cooked)
  2. Let the quinoa drain for a few minutes. I often do this step earlier in the day
  3. Heat the 1 teaspoon of olive oil in a sauté pan
  4. Add the rinsed, drained quinoa to the pan and cook until it looks and smells a little toasty 2-3 minutes
  5. Add the 2 cups of chicken (or vegetable) broth and the 1/2 teaspoon of salt to the pan
  6. Bring the quinoa to a rolling boil
  7. Cover the pan, reduce the heat to low and cook for 20 minutes undisturbed. Remove from the heat and let sit for another 5 minutes. The quinoa will be light and fully cooked
  8. Fluff the quinoa with a fork
  9. Add the chopped cilantro and the juice from the lime and mix together to combine. Taste and adjust the seasonings - it may need more salt, depending on how salty your broth was
  10. Serve with your favorite chicken, pork or beef dishes or as a fabulous vegetarian side dish. And.....
  11. Enjoy the leftovers in my favorite way - as the perfect host for a couple of farm fresh eggs
