Instructions
  1. Combine the water and salt in a large measuring cup or bowl.
  2. Using a fork or whisk, stir the mixture a few times over a few minutes (I just do it every time I walk into the kitchen) until the salt is completely absorbed
  3. Add the rosemary and peppercorns to the brine
  4. Pat the pork chops dry and trim any unwanted fat and place them in a large bowl with the brine. I like to use rib chops in this but any kind of chops or a pork tenderloin work well here too.
  5. Place the bowl in the refrigerator for at least 30 minutes and up to 10 hours. I often make these in the morning and let them brine all day.
  6. Heat the grill to medium-hot or heat a heavy sauté pan to medium-hot
  7. Pat the chops dry and drizzle them with olive oil and the 1 tsp of ground black pepper
  8. Place the chops on the grill and cook, turning once, until cooked through (depending on the thickness of the chops - 5 to 6 minutes per side)
  9. Let the chops rest for 10-15 minutes to allow the juices to absorb and serve. You'll love the moist, juicy flavor of these delicious pork chops
