  1. Use a Microplane to grate the peel from the lime. If you don't' have a Microplane, use a peeler and chop it very fine
  2. Place the butter in a small bowl and add the lime zest
  3. Chop the cilantro
  4. Squeeze the juice from half the lime into the butter, then add the cilantro and a pinch of salt
  5. Mash the butter mixture together with a fork and set in the refrigerator while making the fish. (If the butter is too hard to mash, you can melt the mixture)
  6. Pat the fish filets dry with a paper towel
  7. Brush the fish filets with oil and sprinkle on the salt and pepper. (I used mahi mahi for this recipe, but any firm white fish will work well - halibut, cod or hake)
  8. Heat a tsp of oil in a large saucepan, add the fish filets and sauté the fish, turning once, until cooked through - 3 to 4 minutes per side
  9. Serve the fish with a dollop of the cilantro lime butter (or drizzle a tsp of the melted mixture over the fish) I love to pair this fish with my Cilantro Ginger Rice (great way to use the rest of the cilantro bunch) and a small salad
