  1. Cut 2 of the carrots, the 2 ribs of celery and 1 of the large onions into large pieces
  2. Place the turkey carcass into a large soup pot and add the vegetables and any leftover Thanksgiving items you like - it's OK to get creative here. I added a cup of gravy and some gluten free stuffing
  3. Add enough water to the pot to cover the carcass and vegetables and bring to a boil
  4. Reduce the heat to a simmer, partially cover and cook for 3-4 hours to let the flavors develop in the broth
  5. Check the pot periodically and skim any foam off the top
  6. After 3-4 hours, drain the soup through cheesecloth or a clean kitchen towel into another large pot
  7. Set the broth aside and wash the original soup pot
  8. Peel and dice the remaining 2 carrots
  9. Peel and dice the remaining onion
  10. Peel and chop the garlic
  11. Heat the tablespoon of olive oil in the large soup pot
  12. Add the diced carrots and onions to the pot and cook over medium heat until soft - about 5 minutes.
  13. Add the chopped garlic, the 1 teaspoon of salt, 1/2 teaspoon of pepper and 1 teaspoon of thyme and cook for 30 seconds
  14. Add the broth and bring to a boil
  15. Add the rice, reduce the heat to a simmer and cook for 15 to 18 minutes until the rice is done
  16. Add the turkey to the soup, taste and adjust the seasonings.
  17. serve with your favorite salad and gluten free bread for a delicious light lunch or dinner
