This fabulous, gluten free gingerbread is full of flavor and has a nice spongy texture. Perfect for the holidays or a dessert for the family. We enjoy it with whipped cream or a scoop of your favorite vanilla ice cream. If you don't need it to be gluten free, simply replace the gluten free flour blend with your favorite regular flour (adapted from a King Arthur Flour recipe)

  1. Preheat oven to 350 degrees and spray a 9x9 baking pan with cooking spray
  2. If you have buttermilk, skip to step 4 - If not (Like I never do) make your own! Add 1 tablespoon of fresh lemon juice to a cup measure
  3. Add enough milk to make 1 cup. Let it sit for 10 minute or until it begins to curdle - Instant buttermilk substitute!
  4. Add the flour, sugar, baking soda, salt, cinnamon, cloves, nutmeg and ginger to a large bowl
  5. Mix to combine the flour and spices - smells good already!
  6. Melt the butter in a 2 cup measure and add the molasses. (I always have to hold my nose for this one - I hate the smell of molasses!)
  7. Add the butter mixture to the flour mixture and stir to combine - it will be pretty dense at this point
  8. Add the egg to the 2 cup measure
  9. Add the milk mixture and water. Whisk to combine well
  10. Add the mixture to the flour and butter - stir to combine
  11. Pour the batter into the prepared plan. Smooth the top with a spatula
  12. Bake until a toothpick in the center comes out clean - between 40 and 50 minutes. Let cool completely. It can be a little crumbly as a gluten free cake, so it helps to refrigerate it before cutting it for serving
