  1. Preheat oven to 400 degrees
  2. Cut cauliflower into medium size pieces
  3. Zest half a lemon using a Microplane or use a vegetable peeler and cut into tiny pieces
  4. Mix spices and lemon zest together in a small bowl
  5. Place the cauliflower in a large bowl
  6. Microwave the coconut oil (if using) for about 20 seconds to melt
  7. Drizzle the melted coconut oil (or olive oil) over the cauliflower and mix together
  8. Add spices to cauliflower and mix well to combine
  9. Spread cauliflower on baking sheet lined with parchment paper
  10. Bake for 40 - 45 minutes, turning the pieces every 15 minutes until the cauliflower is well browned and a bit crispy
  11. Serve hot or let it come to room temperature
