Delicious and savory, this easy applesauce is the perfect accompaniment to leftover Thanksgiving turkey as well as your favorite chicken or pork dishes. I like using a mix of apples and I often buy seconds at the farmer's market. It's also a great way to use up those older apples in your fruit drawer.

  1. Peel, core and chop the apples into small pieces. I love this soft skin peeler from Zyliss - it makes quick work of the apples
  2. Cut three strips of rind from the lemon - using a peeler or a sharp knife. Juice 1/2 of the lemon and set aside
  3. In a large saucepan, combine the apple pieces, lemon peel, lemon juice, cinnamon sticks, sugar and water
  4. Bring to a boil, reduce heat and let simmer, stirring occasionally, until the apples are soft - 20-30 minutes
  5. Remove cinnamon sticks & lemon peels. Use a potato masher or large spoon to incorporate any large apple pieces
  6. Stop mashing when the applesauce has reached a chunky texture - or texture of your liking
  7. Let cool to room temperature and serve or store in the refrigerator for up to a week
Recipe Notes

Like many of my recipes, this applesauce is not terribly sweet.  If you like your applesauce sweeter - just add more sugar to the mixture before cooking
