  1. Peel and cut the carrots on the diagonal in 1/4" pieces
  2. Grab the thyme sprigs, or teaspoon of dried thyme (and glass of wine if you feel like it!)
  3. Add a tablespoon of olive oil to a sauté pan, add the garlic and cook for 30 seconds
  4. Add the carrots, 1 teaspoon of sugar, 1/2 teaspoon of salt and 1/4 teaspoon of pepper
  5. Cover and cook until they begin to soften slightly 5-10 minutes. Check and stir often
  6. Sprinkle with the thyme leaves or teaspoon of dried thyme and cook, uncovered, until the carrots are al dente or as soft as you like - another 5-10 minutes
  7. Squeeze the lemon juice over the carrots and stir to combine the flavors. Taste and adjust the seasonings as needed
  8. Serve with your favorite meat or fish and enjoy! These make a lovely addition to your holiday table too.
