  1. Heat the oil in a large sauté pan
  2. Add the chopped onion and sauté until soft - about 5 minutes
  3. Add the garlic and and Italian herb mix and cook for another 30 seconds
  4. Grab your bag of riced cauliflower (I love the frozen Trader Joe's). I think it's a fantastic time saver and at $1.99 it's a bargain. I buy a few bags and keep them in the freezer
  5. Add the bag of riced cauliflower (right out of the freezer) to the pan and break up the lumps with a spoon
  6. Add a pinch of kosher salt and ground black pepper along with the chicken (or vegetable) broth.
  7. Reduce the heat to low and cook until the cauliflower is tender, yet still firm to the bite - about 10 minutes
  8. Serve with everything! I love it as a side dish with chicken or fish, as a base for curry or stew or just by itself. Throw the leftovers in a salad - it's delicious cold too!
