  1. Preheat the oven to 350 degrees
  2. Cook the bacon until it's nice and crisp. Set aside
  3. Place the cauliflower florets and minced garlic in a large pan of salted water. Bring to a boil and cook for 20 minutes or until the cauliflower is tender and soft
  4. Drain the cauliflower/garlic
  5. Return the cauliflower to the pan, add the butter and milk
  6. Using a hand mixer or immersion blender, blend the cauliflower until it looks like mashed potatoes - about 3 minutes
  7. Grate the parmesan - I use about 2 ounces for this recipe, but feel free to add more if you like
  8. Add the parmesan cheese, salt and pepper and give it a stir
  9. Spray or butter a baking dish
  10. Place the cauliflower and parmesan mixture into the baking dish. Cover with the crumbled bacon slices
  11. Bake until hot - about 15 minutes. Serve with chicken, beef pork and/or fish. Enjoy the leftovers all week long.
