The Spicy Peanut Sauce
The Beef Satay

Instructions
Make the Spicy Peanut Sauce
  1. Place the peanut butter in a small bowl with the hot water
  2. Zest all 4 of the limes using a Microplane or small grater. Divide the zest in 2 piles
  3. Add the Asian chili sauce, brown sugar, chopped garlic, fish sauce and the zest and juice from 2 of the limes to the sauce
  4. Add the chopped cilantro to the sauce
  5. Whisk the sauce to combine the ingredients. Add more hot water if needed. The sauce should be somewhat thick, but easy to dip the steak. Taste and adjust the seasonings. Set aside
Prepare the flank steak
  1. Freeze the flank steak for about 30 minutes or until it's really cold, but not completely frozen. (This will make it easier to slice the steak)
  2. Slice the flank steak against the grain into 1/2" thick slices
  3. Place the slices of flank steak in a large zip top bag
Make the marinade
  1. Place the chopped garlic, fish sauce, vegetable oil, Asian chili sauce, brown sugar, scallions, chopped cilantro, the remainder of the lime zest and juice of 2 limes into a bowl
  2. Stir to combine the ingredients
  3. Place the marinade in the zip top bag with the flank steak. Let marinade for at least 30 minutes and up to an hour
  4. Place the skewers (if they are wooden) in cold water and let soak while the steak is marinating
Grill them up!
  1. Preheat the grill to medium high
  2. Place the marinated flank steak slices on the skewers.
  3. Grill the skewers, turning occasionally, until they are cooked through. 10 -12 minutes
  4. Remove the satay from the grill and let sit for a few minutes
  5. Serve with the Spicy Peanut Sauce and your favorite summer sides. We enjoyed them with a beautiful salad and some sautéed fresh green beans. Just fantastic!
