  1. Preheat the oven to 400 degrees
  2. Coat a casserole dish with cooking spray or brush with olive oil. I like to use the coconut oil spray from Trader Joe's. It adds a nice touch of flavor
  3. Add the chicken breasts to the pan and brush with olive oil
  4. Sprinkle the chicken breasts with the salt, pepper and thyme. Slice the lemon and place the slices in with the chicken
  5. Grab your parchment paper. I LOVE this Reynolds pre-cut parchment paper. It fits a half sheet pan perfectly, and works wonderfully for this recipe. I found it at Amazon.com
  6. Spray one side of the parchment paper with cooking spray and tuck it (spray side down) in and around the chicken breasts. The parchment keeps the juices in during the cooking and results in a lovely moist chicken
  7. Bake the chicken until the center reaches a temperature of 165 degrees - between 20 and 30 minutes depending on the size of the chicken pieces
  8. Serve with your favorite side dishes or put it in the refrigerator to use in salads and soups
