This delicious, healthy soup is easy to make and highlights some of season's best ingredients. I use italian chicken sausage for this recipe because it's lean and tastes terrific. You can easily substitute sweet italian pork sausage, and if you like a bit more spice use 1/2 hot italian sausage. I love swiss chard in this soup, but any greens you like are easily substituted. Many stores have washed and bagged spinach, kale or mixed greens which will save you a little time as well.

  1. Wash the swiss chard or other greens of your choice
  2. Cut the tough stems off the chard and place the leaves in a pile together
  3. Roll the pile of greens together like a cigar
  4. Cut the roll of greens into 1/2 inch strips. The fancy name for this technique is chiffonade - sounds cool right?
  5. Chop the onion into a large dice
  6. Mince the garlic
  7. In a large heavy pot, heat the olive oil over medium heat until hot
  8. Add the chopped onion and cook until the onion is translucent, about 5 minutes
  9. Add garlic and cook for 30 seconds, until fragrant, but not burned
  10. Add the sausage,salt and pepper to the pan and sauté, breaking up with a spoon, until browned, about 5 minutes
  11. Add the sweet potatoes (or regular potatoes) and stir to combine with sausage and vegetables
  12. Add the chicken broth and water and bring to a boil and then reduce to a simmer
  13. Add the chopped greens to the pot
  14. Simmer for about 4 minutes, just until the greens and potatoes are tender.
  15. Taste the soup and adjust the seasonings to your liking. You may want some additional salt and/or pepper
  16. Serve with a tbsp of grated parmesan cheese and enjoy!
