Quinoa with Cilantro and Lime

A new KilKenney Kitchen Basic, this quick, easy, delicious side dish is the perfect accompaniment for chicken, pork or beef. It's fantastic left over with eggs or tossed in a salad. You'll want this on hand all summer.

Tortilla Soup

This savory, spicy and delicious soup is one of my favorites. The rich, smooth broth envelopes shredded chicken, avocado, Mexican cheese and cilantro creating a fantastic, flavorful soup everyone in your house will love. (this recipe is adapted from a Rick Bayless recipe)

Tacos Anytime

Homemade taco seasoning is the bomb. It ensures delicious, savory, gluten free tacos that are the perfect spice level for you and your family. I like to make a double batch of the seasoning and keep it in my pantry so it's ready when I am. I often make a batch of taco meat and Savory Rice with Ginger and Cilantro and keep them in the refrigerator for quick meals throughout the week.

This easy, quick and delicious and always a hit. The recipe doubles or triples easily and is perfect with chips, tacos, sandwiches or salads. YUM!

Chicken Enchiladas

This delicious enchilada recipe is the perfect make-ahead dish, it doubles or triples beautifully and is always a hit with family and friends. The full recipe has a few more steps than usual, but the flavor of the enchilada sauce is well worth it. I also provide some options for substitutions that will take less time.
